Paleo sushi

Paleo Sushi will become my go to lunch for sure!

2 Nori Wrap
1 Carrot Slices in long thin slices
1 Cucumber cut into long thin slices
1/2-1 Avocado
1/2 can tuna drained well
2 Eggs
Sriracha & Coconut Aminos to taste
Scramble up the eggs. Cook 1/2 of the mix into a flat pancake, sort of like a crepe.  Place it on top of the the Nori Wrap.  Mix the tuna with a small amount of the Sriracha & Coconut Aminos, don't make it liquidy though. About 1 inch from the bottom make a horizontal line of the tuna mixture.  Above that place 1/2 your avocado in a line, then 1/2 of your carrots & cucumbers.  Begin rolling from the bottom and roll tightly.  When you get to the top, use either water or coconut aminos to seal the Nori paper wrap. Repeat, & then eat!

I don't have a sushi mat to roll it with, so it is still a bit too loose which means that I can't actually cut it into pieces without it falling apart.  So I just eat it like a hand roll.
