Fun Kids Lunch! A Very Hungry Caterpillar Themed Lunch

Okay, as you can see that I am not super strict with Paleo with my kids.  There is cheese and a mini blueberry muffin (which they really didn't eat much of anyway).  But the rest is either fruit, veggie or meat.  They loved this meal!

Quick & Easy Paleo Egg Drop Soup

This took literally 5 minutes to prepare.  So simple & good!

Boil chicken broth. I measured out one bowl full and then cooked that since I was the only one eating.

Add Frozen Veggies. I added about 3 handfuls, but would have enjoyed it with twice that.

Add amino acids for soy sauce flavor.  I sprayed about 6 sprays of Braggs amino acids because that was what I had, but coconut aminos would work well too. Salt & Pepper to taste.

Bring to a boil, cook until veggies are done, turn down the heat.

Pull pan off the stove and add one slightly scrambled egg to the pan. Don't stir right away.

Return to the cooler stove top.  After a minute, stir.

Make sure the egg is no longer slimy, pour into your bowl & enjoy!

My daughter said she didn't want any until she saw it, then she had to have some of mine!

Coconut & Green Chili Egg Casserole

12 Eggs
1 Cup Coconut Milk (canned)
1 7 oz. can of Green Chilies (or 2 if you like more)

Mix together & pour into Casserole dish.  Bake on 350 for 20 minutes.  I've also made it without the coconut milk on the stove-top as a scramble.  Top with slices of Avocado & Salsa.

We used to make this with Cottage Cheese & Cheddar Cheese.  It is really good that way, but not Paleo.  So, this is my adaptation of one of our favorite dishes.  If you are including dairy in your diet, sprinkle about a 1/2-1 cup grass-fed cheddar on top before baking.

Rich Chocolate Avocado Cupcakes

It's funny, these are incredibly rich, but not incredibly sweet.

2 large Avocados
3 Eggs
1 T Vanilla
1/3 C Honey (I would try 1/2 cup next time &/or use Maple Syrup or Agave)
Put the above ingredients into a blender & blend until smooth, then pour into a bowl.
Melt 4 oz. dark chocolate with 1 T of Coconut Oil, then add to bowl.
Add the following ingredients.
1 tsp Baking Soda
1/2 tsp Salt
2 T Coconut Flour
1/2 C. Enjoy Life Chocolate Chips
Spoon into muffin cups, bake on 350 for 25 minutes or until toothpick comes out smoothly.

Sausage & Squash in Spaghetti Sauce One Pot (Skillet) Meal.

This wasn't a huge hit because I used mini hot dogs, not Italian sausage.  However, with Italian sausage this would have been a favorite I think!  So easy!

Saute yellow squash & zucchini until nearly done.  Add some pre-cooked italian sausage & top it with a generous portion of Organic no-sugar Marinara Sauce.  After I scooped it onto the plate I put a small bit of Dublinder Cheese crumbled on top, but that is totally optional.

WAY TOO GOOD Chocolate Chip Almond Butter Cookie Dough Dip

I was really craving chocolate chip cookies tonight, but my kitchen was a mess!  After doing the dishes, I did not want to make everything dirty again.  So I made up this recipe.  It's dangerous because it is soooo good!  But it is filling too, so I guess that is good, you won't really over eat with it!

Mix 2 tbsp Almond Butter, a pinch of salt, 1 tsp Vanilla, 1 tsp coconut oil, and 1 tbsp maple syrup (you could reduce or omit this and I bet it would still be amazing!). Then add Almond flour a little at a time until it is at the right cookie dough consistency, I used about 1 tbsp, I think. Once it looks like cookie dough, mix in 1 tbsp Enjoy Life Chocolate Chips.

I cut up an apple and ate it like cookie dough dip.  However, next time, I think I will make celery boats with it.  I really think it will be good that way.  But you can always just eat it with a spoon!  Trust me, it is good!!!

Oh and I did share with my husband, but I think I had more like 2/3 of it.

I just guessed on the measurements above because I don't actually measure my food when I cook.  But this morning I was thinking that I may have been wrong on some of them so I decided to make another batch to put on celery for the kids lunches today.  Here is what I did when I actually measured out the ingredients:

  • 2 tbsp Almond Butter
  • Pinch of Salt
  • 1/2 tsp Vanilla
  • 1/2 tsp Coconut Oil (I measured it out, stuck the spoon in a cup & microwaved for 15 seconds to get it at the right consistency.
  • 1/2 tsp Maple Syrup (I reduced it because I thought above was too much)
  • 1 tbsp Almond Butter
  • 1 tsp Enjoy Life Mini Chocolate Chips

Easy Pizza Muffins

This really was so simple!  And pretty good, my boy ate most of them himself!

I preheated the oven to 325 then I greased the tins with coconut oil. My son put about 1 tbsp organic marinara sauce (with no added sugar) in the bottom of the cups.  While he was doing that I whisked together 8 eggs, added 1/2 tsp oregano & 1/2 tsp basil.  When my son was done, I filled the cups to about 3/4 full with the egg mixture.

Things I learned:
1.  Use a spoon and swirl the egg into the sauce without mixing completely.
2. Use some sort of meat & veggies with it.  I would put chopped up pepperoni or sausage & mushrooms or olives next time.
3.  Add salt to taste after.  I omitted the salt from the recipe. I originally added 1/2 tsp of salt, but with the salt that was already in the sauce, we thought it was too salty.
